Sauteed mango, fresh strawberries, whipped cream, and a simple crepe.
With the scorching heat just outside my windows (96°F to be exact), I found myself scouring my fridge for a refreshing snack. I went straight for the mangoes and decided to change it up a bit instead of eating it the traditional way!
For the mango, I put about 2 cups of diced mango, 1 tbs of water, and 1 tsp of white sugar. (It depends on how ripe your mangoes are, unfortunately mine were a little on the sour side so I opted for a little more sugar) I covered the pot and let it cook for a few minutes until the mango was soft enough to mash a bit.
The SIMPLEST Crepe Recipe
1 cup FLOUR
1/2 cup WATER
1/2 cup MILK
2 good sized EGGS
2 tsp BUTTER
Dash of SALT
1. In a large bowl, mix in the FLOUR, WATER, MILK, and EGGS with a whisk.
2. After the contents are mixed together cohesively, mix in BUTTER and a dash of SALT.
3. Spoon in a spoonful over a flat pan and quickly shape the batter into a circle using the bottom of your ladle.
